Bourbon Barrel Aged Imperial Stout with Oaxacan Honey and Sri Lankan Cinnamon.

Much like our first release, we have taken familiar ingredients to use with this beer, but sourced them from unusual locations. For Canopy, we left the remote islands and instead ventured to remote forests. Adding honey from the forests of the Oaxaca region of Mexico, the plants the bees collect their pollen from create a truly unique honey. With a strong smokey character that balances out the rich, sweetness of the honey, it is unlike anything we’ve tasted before.
From the jungles of Sri Lanka, we found Celon Cinnamon quills. This has long been regarded as some of the finest cinnamon in the world, with a more delicate flavor than the typical spice and less intense burn. You may also find a hint of citrus in this cinnamon, which is a unique and wonderful surprise.
These ingredients were added a blend of two of our bourbon barrel aged imperial stouts for a beer that has flavors that compliment each other and create delicious balance.
